Did you know that residents of the Shinshu area are among the healthiest and longest lived in Japan?

One of the secrets is the food. Shinshu’s miso, soy sauce, pickles, and other fermented foods are nurtured in a rich natural environment. Fresh and nutritious fruits are also grown in the area. People here have been eating highly flavorful frozen tofu and frozen radishes as valuable sources of protein since ancient times.

They also consume more vegetables than anywhere else in Japan. Agar, a health food effective in preventing and mitigating diabetes and arteriosclerosis, is also popular.

At Tateshina Shinyu Onsen, we serve these healthy ingredients as “Tateshina Mountain Cuisine” prepared in a Japanese-French style. On the second night for guests staying two nights in a row, we serve Japanese-style “Tateshina Mountain Gohan,” which is both delicious and inventive.

Fresh vegetables are served for breakfast at the Tateshina Sunny Salad Bar. This is a refreshing way to start your day. A variety of delicious Shinshu delicacies are available in portions small enough that you can try them all. Please enjoy our Japanese-style “Tateshina Mountain Gohan” breakfast.

Meal times

To avoid congestion, we offer several meal time options for you to select from when checking-in. However, serving times may change depending on the date. If your desired time is full, we will serve your food at another available time. We appreciate your understanding in advance.

Breakfast times

Accommodations for allergies, etc.

We have made the following three arrangements to ensure that guests with food allergies can safely enjoy their meals at Tateshina Shinyu Onsen.

(2)[Applicable allergens: 6 items]

Of the seven specified allergenic ingredients (eggs, milk, shrimp, crab, peanuts, buckwheat, and wheat), the hotel can make accommodations for all except wheat. If you wish for an ingredient to be excluded, please inform us at the time of reservation.

  • Please note that we may not be able to accommodate the following requests:
    - If you are unable to consume any form of dashi (Japanese soup stock).
    - If your dietary restrictions include specific ingredients in seasonings.
    - If your request is made on the day of your stay or shortly before.
  • Please note that wheat cannot be excluded because it is contained in seasonings such as soy sauce and miso, which are indispensable in Shinshu cooking methods.
  • We are unable to accommodate any ingredients other than the six items specified by the hotel.

(3)[Guarantees and bringing in food]

We do not guarantee the complete removal of allergens from our food, as dishes are prepared in the same kitchen as those containing allergens. If you need assurance that your food contains no allergens whatsoever, please refrain from dining at the hotel for your own safety. If you are unable to dine at the hotel due to allergies or other reasons, you may bring in your own food. In such case, please contact us in advance.

Local Sake from Suwa, Shinshu

Brewing delicious sake requires delicious water and rice. The Suwa area of Shinshu, at the foot of Mt. Kirigamine, is blessed with pure water and a cool climate. It is also watched over by the miraculous powers of Suwa Taisha Shrine, making it one of Japan’s leading brewing areas.

Since you have come all the way to Tateshina, along with your meals made using local mountain ingredients, we would also like to treat you to some world-class Suwa sake from a local brewery. We have a broad range of options available.

Nagano Wine

Nagano Prefecture is blessed with little rainfall, long hours of sunshine, a large temperature difference between day and night, and well-drained soil, making it the perfect place for growing high-quality grapes. The prefecture produces the highest volume of wine grapes in Japan.

The history of winemaking in the area dates back to the Meiji period, and today, there are 25 unique wineries of various sizes producing high-quality wines, albeit in small batches.

In recent years, many Nagano wines have won awards at prestigious competitions, and their reputation has been growing year by year. We have a wine cellar at the entrance of the restaurant, and offer what is likely the largest selection of Nagano wines in the prefecture. Wine lovers are sure to be satisfied. Please enjoy a bottle.

The word “misuzu,” which means to mow down, is used in the ancient collection of poetry Man’yoshu, and is said to have been an exclamation used by ancient people in the Shinano area before the advent of writing when they saw overgrown thickets of bamboo grass. We named the restaurant Misuzugari to signify that it is a place where you can taste the rich cuisine of Shinano, an area with clear fresh air, clear rivers, and a rich natural environment.

Once you step into the restaurant, you will feel the atmosphere of the time when this Western-style building was constructed by Japanese carpenters in the Taisho and early Showa periods. The private rooms, which are partitioned off by doors reminiscent of the Taisho period, allow you to relax and enjoy your food and drinks.

At Tateshina Shinyu Onsen, we consider sake to be an important aspect of our hospitality. At the entrance of the restaurant, our sommelier will welcome you with a wide selection of world-class sake from Suwa breweries as well as wines from Nagano, which are gaining a reputation.

In Tateshina, the mornings and evenings are cool even in summer, and the winters are extremely cold. We are proud of our comfortable, warm floor heating system, which will warm you from the bottom up.
